Recently I tried a recipe from the blog Deliciously Ella called Quinoa and Cacao Crispy Treats and it inspired me to make my own version with the ingredients I had on hand. My husband and I love these so much I have a hard time keeping them in the house, they are always gone within days of making them. Since I have made them about 4 times now, I made a few changes each time and came up with the best possible combination of ingredients.
- 3 cups quinoa puffs
- 2/3 cup cacoa powder
- 1/4 cup peanut butter
- 1 package of grace creamed coconut (141 grams)
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1/2 teaspoon stevia
- pinch of sea salt
**I used less maple syrup and added some stevia to cut down some of the sugar content but you can always omit it and add more maple syrup or any sweetener of choice. I have also used date syrup with success, and its about the same price as maple syrup.
In a small pot on a very low temp mix together the coconut butter, coconut oil, peanut butter, chocolate, maple syrup, cacao, and stevia. Keep an eye on it so it doesn't burn and stir often.
In a large bowl measure out the 3 cups of quinoa puffs and add the sea salt.
Once the mixture in the pot has melted, mix into the quinoa puffs.
Scoop mixture evenly into a mini muffin tin with liners and press firmly into the cups, I have a silicon one that is perfect for this.
Put in the freezer until it sets, at least 30 minutes. I like to store mine in the freezer but they will keep just fine in the fridge too.
